Welcome to Freedom Friday!

I dont know about you, but I love Fridays! I get feelings of completion, freedom, and stress-relief all rolled up into one day! Don’t get me wrong, I love what I do for a living. But I believe it is crucial to have some fun on the weekend, allow your body and mind to relax and recharge to get ready for the next week. So with that said, welcome to FREEDOM FRIDAY!

Each week I will post something FUN to get your weekend started on the right foot: recipes, feature something fun going on, maybe even a fitness activity you can do with your family. This week I am kicking things off with a recipe that is perfect with the new football season upon us. This is a great party food for entertaining and can also be a great mid-week meal to mix up your menu.

Low Fat Buffalo Taquitos

It’s football season, and I LOVE making homemade healthy versions of my favorite sports bar snacks for to watch the games on Sunday! Last week I made Buffalo Taquitos and I gotta tell you, they were pretty darn amazing! It was a new spin on my Baked Chicken Floutas.

Here is what to do:

1: Preheat oven to 450 degrees.
2: Brown 1 pound of lean ground chicken in a saute pan with 1 tbsp margarine and 3 tbsp low fat cream cheese.
3: Once the chicken is about 2/3 away from being done, add 1/2 cup of your favorite wing sauce.
4: Allow everything to mix together well and heat thoroughly and then place in a bowl.
5: Take 4-5 burrito sized flour tortillas (9 inches) and cut each one in half. Then spoon your chicken mixture on the straight side of the tortilla (about 2-3 tbsp) and top with your favorite flavor shredded cheese.
7: Then roll up your tortilla starting on the straight side and place on a well-oiled cookie sheet, seam side down.
8: Repeat 8-10 times until your chicken is all gone!
9: Place in oven for 10 minutes, then flip and give then another 3-4 minute depending on your oven. You want them to be crispy and golden brown!
10: Once you take them out of the oven, let them cool for a couple of minutes and then cut in half and serve with blue cheese dressing or low fat ranch and celery sticks.

You will be the football party hero and the crowd will go wild when you serve these! Enjoy!

  1. You know what, I agree with you. All of us must give ourselves the chance to enjoy the weekend and appreciate the fruits of our labor because if not, that may cause us to get drained and burned out which is not good at all. By the way, your Buffalo Taquitos looks great 🙂
